- 1 medium egg
- 2 oz cream cheese or grated cheddar or other cheese
- 1 tablespoon coconut flour
- Beat egg until fluffy.
- Gently stir in the cream cheese /grated cheese and coconut flour.
- Heat grass fed butter /coconut oil in skillet and add spoonful of batter.
- Cook each pancake for 2 minutes per side.
- Serve warm with a dollop of butter or cream and blueberries or blackberries on top butter on top or spread some papaya chia jam.
