Amazing Low-Carb Pizza

Low Carb Pizza with tomatoes, mushrooms, capsicum
AMAZING LOW CARB PIZZA Ingredients
  • 4 large eggs
  • 3 c. shredded mozzarella
  • 1/4 c. freshly grated Parmesan/cheddar or cheese you prefer
  • Sea salt
  • Freshly ground black pepper, red chilli flakes
  • 1/2 c. pizza sauce (make with tomatoes, oregano, onions, garlic)
  • 1/4 c. pepperoni (optional)
  • 1/4 c. thinly sliced mushrooms
  • 2 tbsp. thinly sliced black olives
  • Fresh basil leaves, chopped
Instructions
  1. Preheat oven to 425°. Grease glass pan or baking sheet. Mix together eggs, 2 cups mozzarella, and parmesan. Season with salt and pepper, and spread mixture evenly on baking sheet.
  2. Bake until lightly golden, about 12 to 15 minutes. Spread pizza sauce on top. Sprinkle remaining mozzarella, pepperoni, mushrooms, and olives. Sprinkle oregano and chilli flakes if you wish.
  3. Bake until cheese is melted about 15 minutes. Sprinkle with basil. Cut slices and serve.
